Image cut out? Tutorials as not working or doing it wrong

Hi, new to the software, is there an A-Z walkthrough, beginners guide anywhere? I thought I would teach myself first thing I’ve tried is cut out background from under AI options and it’s not doing anything to the image or just turning it black. Search help could find nothing on doing this? Thanks

What do you mean with cutting the image out ? What are you trying to achieve ?
